Clean & Lean Banana Bread

I recently heard a fitness professional say that if you exercise for an hour or more a day, you’re considered an athlete.  And at first I was like, hey! that makes me an athlete.  But then I was like…wait…I haven’t exercise vigorously or consistently since Thanksgiving.  Sooo, maybe not.  But then I was like, wait!  All athletes have an off season.  I’m not out of shape, I’ve just been maximizing my rest period during my off season.  Which, coincidentally falls between November and February every year.  Because #holidayfood and #winterbod


But, around this time every year I start to get the itch to get back in the gym, hit it hard, dial in on nutrition, and set some serious boundaries with my friends sugar and processed junk.  Coincidentally, around the same time spring and summer clothing begin to appear.


I’ve been meaning to post a clean banana bread recipe for a while as it’s one of my faves, especially as a pre-workout snack to help me power through!  And this one I whipped up this morning was legit.  Super moist and flavorful, awesome texture, and just the right amount of natural sweetness that allowed the banana flavor to shine through rather than being drowned out by sugar.


Also, side note.  Homeschooling is going well.  There are ups.  There are downs.  There are surprises.  Lots and lots of laughs.  And also lots of learning happening on every end.  I love teaching the little folk and learning from them too.  We have a major obsession with playing UNO right now which is a fun way to do numbers, colors, critical thinking and planning, and flex our competitive muscles as well.  And believe, mom does not take it easy on the small ppl.  Both wins and losses are chances to build character and learn not to be a jerk about it either way, but to stay positive and have fun!

1 3/4 cups of Einkorn flour
2 scoops vanilla vegan produce powder
3 overripe bananas, mashed
1/2 cup melted coconut oil
1/3 cup unsweetened non-dairy milk

1/4 cup honey or agave
2 eggs
1 teaspoon of vanilla extract
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 teaspoon of salt


  1. Preheat oven to 350F and grease a loaf pan.
  2. Mix bananas, melted coconut oil, milk, honey, eggs, and vanilla in a medium bowl until combined.  Do not overmix.
  3. Add in dry ingredients – flour, vegan produce powder, baking soda, cinnamon, and salt.
  4. Mix until just combined, do not overmix.
  5. Transfer batter to greased pan and bake at 350F for 55 minutes or until a toothpick comes out of the center clean.
